Your Employees Have Been to Enough Meetings
If you're asking people to give up an evening in December, make it worth leaving the house.
That doesn't mean you need an enormous gala.
It means thinking about the experience from the guest's perspective.
Can people grab a drink when they arrive?
Is there food available before everyone gets hungry?
Can they move around and talk to people they don't normally sit next to?
Is there somewhere comfortable to sit?
Is dinner going to take two hours?
Do they actually have to listen to a 45-minute speech before they're allowed to eat?
These things matter.
A holiday party should feel like a thank-you, not another obligation on the calendar.
Start With How You Want the Night to Feel
Before we talk about menus, we like to understand the event.
Who is coming?
Is this employees only or are partners invited?
Is the goal to celebrate a successful year? Thank clients? Bring multiple departments together? Give everyone a chance to relax?
A 40-person leadership dinner needs a completely different approach than a 300-person company celebration.
Once we understand the people and the purpose, we can build the food and service around them.
You Don't Automatically Need a Plated Dinner
This is one of the first things we tell clients.
A traditional seated dinner can be beautiful. Sometimes it's exactly right.
But it isn't the only way to throw a great holiday party.
For a social company event, we often love food stations, substantial passed hors d'oeuvres, chef-attended experiences, and menus that encourage people to move around the room.
Why?
Because people talk.
They get up.
They run into someone from another department.
They go back for something they loved.
The food becomes part of the party instead of an interruption to it.
If you're hosting a more formal awards dinner or client event, a plated meal may make much more sense.
There isn't one correct format. There is a correct format for your event.
Good Food Is Important. Timing Might Be Just as Important.
You can serve an incredible dinner and still lose the room if everyone waited too long for it.
Corporate events have their own rhythm.
People arrive at different times. Someone inevitably wants to make remarks. Awards run long. Transportation has a schedule. Entertainment needs a window. Your CEO may decide at 4:45 that they'd like five minutes on the microphone.
We've been doing this long enough to know that the timeline on paper and the event happening in front of you aren't always exactly the same.
That's where an experienced catering and event team matters.
Our job isn't simply to prepare dinner.
It's to pay attention.
Let December Taste Like December
Holiday catering doesn't need to mean carving stations and mashed potatoes every year.
One of our favorite parts of creating seasonal menus is using what's actually good right now.
Late fall and winter give us completely different ingredients and flavors than a June wedding, and that's a good thing.
A holiday menu can feel warm and familiar without feeling predictable.
It can be elegant without being fussy.
And it should still taste like Crafted.
Don't Forget the Bar
If you're serving alcohol, think about the bar as part of the guest experience rather than an afterthought.
A hundred people arriving within 20 minutes and heading toward one bartender is not a festive start to the evening.
Guest count, bar placement, staffing, glassware, drink selection, and the timing of service all affect how the event feels.
Sometimes the best decision isn't adding more choices.
It's simplifying the choices and serving them really well.
A signature cocktail, thoughtful wine and beer selections, and a strong nonalcoholic option can go a long way.

December has a limited number of Thursdays, Fridays and Saturdays, and hundreds of companies across the Capital Region are looking at the same dates.
By late summer, we recommend starting the conversation about larger holiday events.
You don't need every menu decision made in August.
